
Spring has finally sprung in my neck of the woods, which means the hunt for wild spring edibles is ON!
In the Northwestern U.S., Dandelions are one of the first delicacies to grow, followed shortly by morel mushrooms.


We’ve seen the dandelions popping up for a couple of weeks now, but after a long walk the other day we were lucky enough to find a few precious morel mushrooms as well!
These are definitely just babies beginning to grow for the season. As you can see from the darker brown areas on the caps, they have survived some freezing nights, which means it is still a little early in the season to be finding these mushrooms.
